Israeli Osetra (A. gueldenstaedtii)

Using Caspian Osetra brood stock (Acipenser gueldenstaedtii), sturgeon are being raised in controlled environments in Israel and Belgium, producing Osetra with all the classic characteristics of wild caught sturgeon caviar. Medium in bead size, the color ranges from dark to golden brown and has a well-balanced flavor with rich hints of fruit and nuts and a lovely clean finish. The Israeli Osetra has a bolder flavor profile than the Belgian Osetra, which is more delicate in flavor

Idaho White Sturgeon (A. transmontanus)

A beautiful, medium size bead that ranges in color from rich grey to glossy black.  It is very similar to the species Osetra from the Caspian Sea.  Indigenous to the waters and rivers of the Pacific Coast of North America, this species (Acipenser transmontanus) is being raised through sustainable means of aquaculture in Idaho. The pristine water quality gives it has a crisp texture with a bright, nutty flavor that is bold and lush. 

Siberian Sturgeon (A. baerii)
$80 per oz.

Baerii, also known as Siberian sturgeon caviar, this species (Acipenser baerii), is being raised through sustainable methods in Finland, under conditions identical to their native waters. The caviar is a lustrous small dark gray bead with a bold and buttery flavor that coats the palate with delightful silkiness.

Paddlefish (Polydon spathula) 
$28 per oz.

The Paddlefish is found throughout the Mississippi River system, ours is sourced from Oklahoma.  This prehistoric species (Polydon spatula) produces a caviar that is mild in flavor with glistening gray jewel-like beads, similar in appearance to Caspian Sevruga. Paddlefish presents beautifully, though it doesn’t finish as cleanly as Sturgeon caviar does and is best in conjunction with other foods.

Ikura (Oncorhynchus keta)

Salmon Chum, also known as “Ikura”, the bright orange-red beads are a gorgeous garnish and flavor enhancer.  From Excursion Inlet, Alaska, the Chum salmon (species Oncorhynchus keta) is specifically prized for its roe.  The eggs are quite large, about the size of a pea, making for a glorious burst of salmon flavor.

Golden Whitefish (A. Coregonus hoyi)

Originally transported by train, these fish were taken from the Great Lakes to many North American lakes, planted, raised, and now harvested as a food source. Over the years Whitefish (Species Coregonus hoyi) thrived and are now harvested for their roe. The caviar has a crunchy texture, and a beautiful apricot jewel-like color. Golden Whitefish is a wild caviar, sourced from the Canadian Great Lakes.
